The ice crystals formed in the quick-frozen food are small and almost all spread in the cells, and the cell rupture rate is low, so that high-quality quick-frozen food can be obtained. Similarly, high-quality quick-frozen dumpling products can only be obtained by quick-freezing rather than slow-freezing of dumpling products. The dumplings are quick-frozen when the center temperature reaches -18°C in the quick-freezing room. Usually the spiral freezer has achieved the effect of full automation.
